Join us for an all day deep-dive into food as medicine at our class venue on the pristine South Toe River! Villagers is partnering with local instructors Ryan Milt and Wren Lizabeth for an educational and delicious foray into healing botanical elixirs and foods sourced from our very own bioregion, accompanied by live music. Come for one class, both, or even choose to stay the night and camp beside the river.

1-1:30: Welcome
1:30-3:00: 'Meaditation' Mead Making Class w/ Ryan Milt
Learn the art and science of mead making with locally sourced honey and botanical ingredients. Let's decompress from our chaotic lives riverside, with our true allies: plant, microbe, biped, and fungi!  Come commune with nature, forage fresh wild ingredients, conspire, and create a magical botanical elixir, a medicinal extraction and preservation tradition that dates back thousands of years! 
3:00-3:30: Break and Snack
Have a swim at the river! Foraged and cultivated seasonal fare grazing throughout the day!
3:30-4:30: Food as Medicine w/ Wren Lizabeth
Join Wren around the hearth to discuss the importance of nutrient density and how to find that in your kitchen practices from broth to sauce. Revitalize your daily eating practices while curbing food waste, fortifying your food with commonly discarded veggie skins and tops, layering with local pasture raised bones, and inviting fungal and herbal friends from the wild to diversify your gut microbiome. This will be an interactive class where we will be tasting an array of broths and sauces, as well as going over many ingredients and at home preparations.
4:30-5:00: Mead Tasting
5:00-6:30: Grazing and Live Music!
We will be dining on what is seasonally available from farm and forage to a feast that will tantalize all of your tastebuds! Join us on a food as medicine journey exploring pestos, sauces, broths and fresh produce, meat, and bread. We are excited to explore the versatility and medicinal quality of raw dairy, sourdough bread, and regenerative meat along with fresh, local herbs + produce. This grazing will be soy free, gmo free and cane sugar free. 
Menu items include:
Dry Ridge Farm deviled eggs w/ ramp salt, wild mushroom dust, and green onion
Hickory Nut Gap pasture raised, spatchcocked chicken 
Saucey Spread: chickpea mash, beet hummus, medicinal pesto
Golden spiced sipping broth from herbs, roots, and fungal friends
Sourdough breads w/ herb-infused butter
Pickled and preserved fruits: figs, lemons, and peaches, oh my!
Fruit + nut board w/ Lusty Monk mustard, olives, pickles and more!

Location: Private and serene events venue on the South Toe River in Celo off of Lower Browns Creek. Directions will be provided upon registration.
Cost: You have several options to curate your experience:
-1:30-3:00p "Meaditation" Mead Making class: $60
-3:30-6:30p Food as Medicine class + Grazing accompanied by live music: $75
-All-day event with "Meaditation" class, Food as Medicine class, and Food Tasting accompanied by live music: $125
-All-day event plus Saturday night camping: $165

Camping is welcomed!

Arrive Saturday 4-6p and pack up Sunday by 8pm. Enjoy strolling through our woodland property and take a dip in the best swimming hole on the South Toe!

Meet your Instructors

Born in the Southern Appalachian Mountains, Ryan Milt grew up with many traditional practices. Gardening, foraging, native and nursery plant propagating, preserving the harvest, medicine making, and crafting with local materials were woven into the day to day.  He has since pursued additional experiential education in permaculture, foraging, fermentation, and medicine making with numerous local legends in these fields. Ryan started Asheville Wild Foods in 2012, where he focuses on creating nutrient dense value added wild foods and potent wild medicinals.   

Wren Lizabeth is a local entrepreneur, bioregional chef and community herbalist with holistic knowledge in guiding conscious consumer experiences and stewardship of dynamic professional spaces. She practices food as medicine, thriving most when she is immersed in deep ecology. Wren has traveled to many biodiverse regions throughout the Americas for some time studying wild food, native plants and traditional methods of medicine making, mixology & culinary cuisine. This exposure to ecology from a cultural and traditional lens keeps her passions ignited as she deeply enjoys learning about the past and innovating with respect to bring these practices into modern day life with ease and accessibility. Wren truly believes that food is medicine and that our relationship with food can be creative and free from harsh chemical preservatives, single use packaging, mass production and factory farming. On the plate folks can expect wild and wonderous aromas embedded in flavors and stories that come alive with every bite! Seasonal shifts in Appalachia keep her menu rotating with a variety of flora and fauna.

Wren founded The NOHM Co. in 2015 realizing there was a deep intrinsic need in her community for more meaningful connection, conscious consumption and accessibility for self care and in 2020 launched a sister called The Mertails | Elixirs as Mixers. These elixirs are non alcoholic beverage concentrates that are botanically infused and available for wholesale and retail purchase nationwide. ***CANCELLATION POLICY***

Cancellation by Villagers:

If a class needs to be cancelled because (1) it does not meet the minimum number of registrations or (2) due to inclement weather, you will be notified by email 24 hrs in advance.  Please check your email 24 hrs prior to class.  For cancellations by Villagers, you will receive a full refund.

Cancellation by Student:

If you cancel within 48 hours of the class, you will receive a refund minus a 15% cancellation fee. Cancellations with less that 48 hrs notice are not eligible for a refund.

If you do not show up and do not give notice, your registration fee will be treated as a donation to the teacher and Villagers.
