Utilize local wild greens for heath and vitality. Come learn to make wild greens pesto, gomacio, tonic herbal vinegars, ramp salt and more! Our Appalachian wild greens are some of the most nutrient dense food on the planet! Become informed on how to incorporate them into your diet in healthy fun ways! May thy food be thy medicine! Including wild foods into our diets is a great way to create and maintain health. These recipes allow us to preserve the spring abundance and continue to eat wild greens into the winter, when less wild food and wholesome nutrition is available. This class will begin with a short plant walk to see what edible plants are around us. It will conclude with a talk on recipes, harvesting and preservation techniques, foraging through the seasons, and medicinal uses of spring herbs. Hands on cooking demo and delicious samples provided!

Scotty Karas is an avid forager, permaculturalist, and herbalist. He leads wild foods tours locally with No Taste Like Home. Scotty loves to teach children about nature and works with local nature connection organizations: Forest Floor Wilderness Programs and Earth Path Education. Scotty also runs his own business and is offering an apprenticeship on Foraging and Growing food through the seasons in 2018.
