Blessed are the cheesemakers! This class opens up the rewarding and delicious world of transforming and preserving milk and cream in your own kitchen and making your own butter, yogurt, and cheese. You’ll learn about the history of dairy cultures, equipment and ingredients, and various tricks and troubleshooting tips to ensure your home dairy success. In the second half of the class, you will get hands-on practice making whipped butter, yogurt, and two beginner’s cheeses – ricotta and queso fresco. The class fee covers the materials and a sample jar of yogurt for you to take home.

Mari Stuart (PhD) is an ecological landscape designer, teacher, writer and urban homesteader living in Asheville, NC. She is the founder of Project Grounded, which helps people to connect with the regenerative agriculture movement through their daily choices. Mari has taught urban homesteading and natural dyeing classes for several years, and co-facilitated the first Permaculture Design Course in the Midlands of South Carolina. She holds a PhD in Asian religions from Harvard University. In 2016, she quit her academic job, enrolled in a six-month Ecological Landscaper training at the Permaculture Skills Center in California, and never looked back.
